| iBook | The Perfect Home Made LatteI am a big fan of Starbuck Latte and also their Caramel Mocchiatto, but its becomign a bit expensive to keep buying them so I thought I would look into making them at home. I've not got a machine yet so was a bit stumped. I have been playing with my caffetierre and believe I have mastered the Latte. The Mocchiatto is just a variation on the Latte. I am quite pleased with this so I thought I would share my method here for Latte lovers out there. Get some milk warming gently in a saucepan, just a bit more than half of the cup you are going to use is enough. While that is warming get the kettle on, and put a single shot of ground coffee in your caffetierre. I recomend strength 4 or above, but 3 should be fine as well. When the kettle has boiled pour in about 50ml of water onto the coffee. You are basically making an equivelent of an espresso. While the milk is warming you should start whisking the milk, slowly at first, but as it gets hotter, whisk more vigourously and create loads of froth. Whisking while it is getting hotter will cause the froth to hold. Once the coffee has been standing for about 2 minutes, pour it into your cup with sugar if required. Once you are happy the milk is hot enough and frothy enough, pour gently into the coffee. If you do it nice and gently the milk will flow to the bottom and the froth will come out last and sit on top of your latte Job Done. To create a Caramel Mochiatto, the method is pretty much the same, but you put a shot of caramel syrup in the cup then pour on the milk, then pour the coffee gently through it. preferably over the back of a spoon. The coffee should not go all the way to the bottom of the cup. once done, pour more caramel syrup over the top. As it heats up it will sink through the froth and sweeten your coffee. And before all you coffee connoiseurs say anything, I know these are not authentic like with steamed milk, but they are the best I can do without a machine. Enjoy! |

![]() | A variation that I use to make a very quick moccha (cheats version) which is very tasty! You need: A cafetiere or milk frother, I found cafetiere works best (with cork base for heat) for a good amount of foam how I like it. To make a single moccha: Put the kettle on. Heat half a cup of milk in the microwave in its cup for around 1 and a half minutes till it is very hot to touch. You can prepare the coffee in this time, or I use instant which gives a good enough taste. Pour the hot milk into the cafetiere and whizz it up and down till you get the milk frothing on top, it will expand more later. Remove frother and place the cafetiere base with the milk into the microwave for another minute, make sure you only put in microwave safe containers. Keep an eye on it, and make up your cup with as if making a coffee with espresso or instant coffee and add 3 teaspoons of cadbury drinking chocolate, add sugar if you wish (quite sweet without). Milk in the microwave will expand further so when it reaches top of the container, take out and pour into cup with coffee/chocolate, adding foam on top. Add hot water to side of cup if required, sprinkle topping on top. |
